Apple Martini
(x12)
2 oz vodka
1 oz sour apple pucker schnapps
1 oz apple juice
Apple slices
Pour all ingredients into a cocktail shaker filled halfway
with cracked ice. Shake well. Strain into a chilled cocktail
glass, garnish with apple slices and serve.
Prawn
My Scallop Crispy
6 tbsp sunflower oil
24oz raw fresh scallops
24oz raw prawns with tails intact
3 onion, finely chopped
3 garlic clove, finely chopped
3 red chilli, deseeded and finely chopped
Juice of 3 lemons
24 drops tabasco green pepper sauce
24oz fresh linguine
3 tbsp fresh coriander, roughly chopped
Remove tails from prawns. Finely chop onion. Finely chop
garlic clove. Deseed and finely chop red chilli. Chop
coriander.
Heat the oil in a heavy-based pan, add the scallops and
prawns and toss for 1 minute until the scallops are just
opaque and the prawns pink. Turn down heat, add onion,
garlic, and chilli and cook to soften. Stir in the lemon
juice and tabasco. At same time, cook linguine in lightly
salted boiling water until tender but still with bite. Drain
then add to scallop and prawn pan. Toss well and scatter
with coriander. Serve immediately.
