favorite recipes!
Shrimp with
Chili, Parsley, Ginger & Garlic on Toast
Olive oil --Extra virgin
Fresh ginger, 2 thumb sized pieces, finely peeled & chopped
4 garlic cloves, peeled and chopped
4 fresh red chillies, deseeded and finely sliced
32 large tiger shrimp
4 lemons
Parsley -- 2 handfuls fresh flat leaf, chopped
Salt & pepper
8 slices (long) of ciabatta bread, toasted
Peel and chop ginger. Peel and chop garlic cloves. Deseed
and finely slice chillies. Take tails off shrimp. Peel
lemons. Chop parsley. Put 8 tb olive oil in large hot frying
pan with ginger, garlic, chilli and shrimp. Fry for about 3
mins, then turn the heat down and squeeze in the juice of
one lemon. Toast ciabatta. Add parsley and a couple of glugs
of olive oil. Toss over and remove from the heat. You should
have a nice juicy sauce, have a taste. It may need a little
more lemon juice. Season to taste. Serve over your ciabatta,
to mop the juices.
